October is National Chili Month. We recommend you start your thinking by focusing on the primary ingredient of any great chili recipe: the beef! Some folks swear by 80/20 ground beef as their chili base, others say it’s all about lean 93/7.
So, for the 93/7, let’s try one that’s healthy, tasty, and a bit easier and less hands-on. Ah, good ol’ crockpot cooking!
Heart-Healthy Flavor-Loaded Chili
What You Need:
- 1 lb 93/7 lean ground beef
- 1 large white onion, diced
- 1 medium green pepper, diced
- 1 can chicken broth 1 can 14.5oz diced tomatoes, undrained
- 1 can 8oz tomato sauce
- 1 can chili or kidney beans, undrained
- 1 tbsp minced garlic
- 1 tbsp cumin
- 1 tbsp chili powder
- 1 tbsp paprika
- 1 tbsp ground coriander
- 2 tbsp Worcestershire sauce
- 2 tsp basil
What You Do:
- Get your crockpot ready and warming!
- Chop your onion and green pepper.
- Brown ground beef and add chopped veggies and garlic (save some onion to throw in the crockpot for a fresh crunch).
- Transfer your beef mixture to a crockpot, then add all other ingredients and stir together.
- Put your crockpot on low 6-8 hrs or high 4 hours and let the flavors marry!
- Top with shredded cheese and onion if desired and… enjoy!
