Fried Corn

Fried corn is as southern as it gets. I learned how to make fried corn from a genuine Southern Belle. Misty would make fried corn, fried chicken & fried hushpuppies for a light dinner. Sheer heaven! I had heard of it, and seen it made, but had never had it, so the first time she made it for me, I was as excited as a schoolboy. School boys don’t get excited like this. I was excited as a psychotic, vine swinging, prehensile tale owning little monkey! I take it to a slightly different direction, but that’s the beauty and fun of creative cooking!

I start out with about 2 ears of corn per person. If you love leftovers, use more, if you are the type to go home with an empty dish, MAKE MORE, because it WILL all get eaten, this I guarantee.

Cut the corn off the cob, and then scrape the cob to release the delicious corn juice.

Use a giant bowl to do this, because corn this fresh wants to travel and you’ll be picking it out of the dog’s hair. Giant.

Take as much bacon (has any body ever really worried they had too much?) as you like, for 4 ears, i’ll use 5 or 7 slices because somebody always samples.

Cut the bacon into 1/2″ pieces and then put into a large skillet. Pan fry till crispy, add onion and cook till translucent. remove about half the grease and add your corn.

Now, add (for 4 cobs) about 2 TBS of butter and a splash of heavy cream. A good coarse salt & freshly cracked pepper to taste. Now, let’s get busy with the fun stuff. Chili pepper flakes about a teaspoon, brown sugar, about a tablespoon.

Cook until all the liquid is gone and you get little tell-tale signs of caramelization.

This is a great dish to take to a church gathering.
