What did you have for breakfast today? Eggs and toast? Cereal and milk? Oatmeal? Pasta and meatballs? (If it was the latter, that’s kind of awesome. Unusual, but awesome.) We all know that breakfast is the most important meal of the day, the meal that fuels us up to power through the day, but too many of us are eating boring breakfasts. And then there are those that skip the meal altogether!
If you’re blasé about breakfast, don’t blame the morning slog: it’s your job to spice things up and create a meal so delectable you’ll be thinking about it before the alarm even goes off. And here’s a little secret on how to do it: Pork Sausage.
Yep. Sausage. We all know and love bacon, but today it’s time to give bacon’s buddy its due respect. Pork sausage is one of the tastiest meats around, but far too often it’s considered boring. Why? Because unlike bacon, which people are currently wrapping around or crumbling into everything from asparagus to cupcakes, sausage is usually cooked up and plopped on the plate as-is. But with a bit of creativity, and a case of Zaycon Fresh Pork Sausage Links (and yeah, they’re available for just $2.79/lb right now!), your breakfast foods will soon be more like breakfast feasts!
If these three winning sausage recipes don’t elevate boring old eggs and toast to the level of “Amazing,” maybe you should stick with pasta and meatballs.
Elevate Your Eggs: Breakfast Sausage Reimagined —
Sausage Pancakes
This meal could hardly be simpler to make, and could hardly make an already awesome food even that much more delicious!
Just dice up one cooked sausage link per each medium sized pancake you plan to cook (Bisquick, from scratch, old family recipe - most any pancake batter is fine), mix the chopped sausage into the batter, and prepare your flapjacks as usual!
Adding syrup, especially maple syrup, will only enhance the awesomeness.
Egg Boats with Sausage
We came across this one on one of our favorite foodie sites, dinnerordesert.com. Thank you Shannon for on amazing meal idea!
Ingredients:
- 4 mini baguettes (or large dinner rolls)
- 6 - 8 cooked pork sausage links
- 8 eggs
- ½ cup heavy cream
- 8 ounces pepper jack cheese, grated
- 3 green onions, thinly sliced
- salt and pepper, to taste
Directions:
- Preheat oven to 350° F.
- Cut and pull out the middle of all 4 baguettes, leaving ½ inch of bread in the bottom and on the sides.
- Cut sausage links into bite-size pieces and set aside.
- In a medium bowl, lightly beat together eggs and cream.
- Whisk in remaining ingredients and sausage.
- Evenly divide and pour the mixture into each bread “boat.”
- Bake boats for 25-28 minutes or until set in the center.
Microwave Sausage Quiche
This one is a true “food hack,” and can be used to prepare appetizers or snacks that would draw oohs and ahs from anyone who doesn’t know how darned easy it was. Here’s what you do:
- Chop up a sausage link.
- Feel free to also mince some onion, some tomato, some pepper, and grab a pinch of cheddar cheese if you want, why not?
- Coat a standard coffee mug with non-stick cooking spray.
- Whisk one egg and all your ingredients together in the mug.
- Microwave the blend for one minute (sometimes 55 seconds is better…)
- Enjoy our beautiful mini quiche!
