Battle of the Beef Round 3: The Taco Wars

All right, to be fair maybe this isn’t actually a Taco War, per say: in war, there are never any real winners. With tacos, there are never any real losers. That’s because whether you choose Zaycon Fresh‘s new 80/20 Ground Beef or our classic 93/7 Lean Ground Beef, you’re gonna end up with tasty tacos everyone will love.

That said, people get pretty passionate about their beef blends, and we certainly respect that kind of commitment. So we went ahead and rounded up two dramatically different taco recipes, one of which was designed with 80/20 in mind, the other that’s heaven with 93/7. So let the battle lines be drawn, or try both and get your double taco on.

Also, on another not, we’ll try to stop using terrible rhymes, but it’s a hard habit to shake. Thanks for being patient with us.

(These recipes work perfectly whether you choose crispy, hard-shelled tacos or if you prefer either corn or flour soft tacos, by the way! You could also try the exact recipes spread over a bed of chopped greens for an amazing Taco Salad.)

Home Style 80/20 Ground Beef Tacos

What You Need:

 

- 2 tablespoons oil

- 1 cup diced onion

- 1 large jalapeno stemmed, seeded and finely diced

- 2 large cloves garlic

- 2 pounds Zaycon Fresh 80/20 Ground Beef

- 2 tablespoons tomato paste

- ¼ cup tequila (white if possible, omit if you want!)

- 2 teaspoons corn starch

- ½ teaspoon chili powder

- ½ teaspoon cumin

- 1 teaspoon salt

- 1 teaspoon paprika

- 1 teaspoon coriander

- ½ teaspoon oregano

- 2 cups beef broth

- 1 teaspoon cayenne powder (optional depending how hot you like your taco)

- Taco shells or tortillas of choice

- Toppings of your choice (cheese, lettuce, whatever ya want!)

 

What You Do:

 

- In a large skillet, sauté onions and jalapeno in the oil over medium high heat for 3 minutes.

- Add garlic and cook one more minute.

- Add ground beef and cook until browned, breaking up beef with a wooden spoon as it cooks.

- While the beef is cooking, place tequila, corn starch, and all the spices and herbs in a small bowl and whisk to combine. Set aside.

- Once beef has browned, strain off all but about two tablespoons of fat.

- Add tomato paste and cook for two more minutes.

- Add tequila mixture and the beef broth and stir, scraping up any bits from the bottom of the pan. Reduce to a simmer and cook for 35-40 minutes or until all of the liquid has evaporated.

- Fill shells/tortillas, add toppings, and eat up!

 

93/7 Ground Beef and Black Bean Tacos

What You Need:

- 1 tsp. olive oil

- 1 lb. of Zaycon Fresh 93/7 Super Lean Ground Beef

- 1/2 sweet yellow onion, diced

- 1 tsp. coriander

- 1 tsp. paprika

- 1 tsp. chili powder

- 1 tsp. ground cumin

- 1 tsp. garlic powder

- 1 tsp. oregano

-1 tsp. onion powder

- Dash of red pepper flakes

- Sea salt and freshly cracked pepper, to taste

- 1 4 oz. can of diced green chilies

- 1 15 oz. can of black beans, drained and rinsed

- Shells or tortillas of your choice

- Toppings of your choice

 

What You Do:

 

- Heat the olive oil in a large skillet over medium heat.

- Add the ground beef, stirring and breaking apart as needed.

- Add the onion as well as the seasonings then cook for 4-5 minutes, stirring occasionally.

- Add the drained and rinsed can of black beans to the beef mixture as well as the green chilies then stir until well combined, simmering for several minutes.

- Add your toppings and enjoy!
